Two Grilled Veggies Recipes

Balsamic Grilled Veggies I'm trying to eat healthy and plan meals better... and I'm tired of  "Salads" for my vegetable intake!  I loves salads, but it's hard to eat one every day sometimes.  So, I found some grilled veggies recipes.  This also helps get rid of those vegetables that are still good, but maybe not as crisp as a few days ago.  My husband can eat them with his rice and I eat them over some lettuce or by themselves. Balsamic Grilled Veggies 6 Tbs Olive Oil 1/4 C Balsamic Vinegar 1/4 C Fresh Chopped Basil 1/4 C Fresh Chopped Parsley Chopped or Minced Garlic (a few cloves) Marinade chosen vegetables for 30 min.  I used carrots, zucchini, mushrooms (on a skewer) and red onions. Grill until done.  Yum. Honey Garlic Kebab Marinade

Here's a quick and easy marinade for kebabs. You can use pork or chicken tenderloins. You can put whatever else you like in your kebabs. We like red, orange and yellow peppers, but you could use green peppers, onions, pineapple... You don't have to let it marinade for very long. The time it would take you to prep the other ingredients is sufficient. 1/4 Cup Honey 1/4 Cup Brown Sugar 1/4 Cup Soy Sauce 1/2 Tsp Parlic Powder 1/2 Tsp Ground Ginger 1/2 Tsp Ground Mustard This is good for 1-2 lbs of meat. Cut your meat into desired chunks and mix the chunks in the marinade.  Put on a skewer as desired, grill on the grill. Serve with rice!

Chicken On A Stick

Chicken on a Stick Here is a little recipe for a  kebab -style chicken.  I first made this in May of 2004- 10 years ago!  I remember making it for guests, and it being well received.  My husband liked it too. Marinade: 2 Tbs Canola Oil 2 Tbs Lemon Juice (or Juice of one lemon) 2 Tbs Soy Sauce 4 Garlic Cloves, minced 2 Teaspoons Honey 1 Teaspoon Ground Cumin 1 Teaspoon Ground Coriander 1 Teaspoon Ground Ginger 1 Pound Boneless, Skinless Chicken Breasts, cut in strips or Chicken Tenderloins Marinate chicken 3-4 hours.  Put the chicken on a skewer, either with vegetables or without, and grill until done. Note-  I made this without the coriander because I  didn't  have any and it was still good.  So, if you don’t have any of that, don’t worry.  You could probably use orange juice or lime juice of you didn't have lemon juice.  Just “eyeball” the ingredients.   

Memorial Day Grilling

Memorial Day Grilling! We got a new grill!   Our old one had paid its dues and had worked quite hard for me since 2003…   This one has a side burner and a rack, which is cool. Aside from the frozen hamburgers we can throw on the grill at a whim, (we found our favorite at GFS) we can also grill veggies and toast the buns AND cook up the rice on the burner! One of my favorite things to do on the grill is to make kabobs!   So, here is my recipe for a marinade.   You can use pork medallions or chicken.   I use red, yellow, orange, green peppers, onions, tomatoes on the skewer as well.   Whatever you’ve got or whatever you like.   ¼ C Honey ¼ C Brown Sugar ¼ C Soy Sauce ½ tsp garlic powder ½ tsp ground ginger ½ tsp ground mustard Marinate meat in the mixture, then put on skewers, alternating the meat and veggies as you please.   (You may want to brush the veggies with some oil.) Grill, serve with rice!

Turkey Patties With Fennel

Turkey Patties With Fennel I know that people really like the recipes, so I will give you another that I have recently tried.   Rob really liked it and said it reminded him a bit of meatloaf.   (He really likes meatloaf.)   This recipe originally comes from South Beach Diet Cookbook) Turkey Patties With Fennel 1 Lb 99% Fat Free Ground Turkey Breast ¼ Large Onion, Grated (or one small one.   I used the food processor) 1 Egg, Beaten 2 Tbs Finely Chopped Pecans (again, I used the food processor, and I used Walnuts instead) ¼ Tsp fennel seeds (The recipe calls for crushed ones, but I only had whole ones) Combine everything in a bowl, then shape into patties.   Cook in a pan or on a grill.   Ground turkey usually needs some extra spices and flavorings so that it does not seem bland.   Also, if you are going to put on the grill, be sure to not turn them very soon. Let them sit until the bottom is good and done, or else it may fall apart....
